It has been raining non-stop for what feels like forever here, and even this self-confessed rain lover is getting over it (mainly because the kid's sport keeps getting cancelled, and my son has WAY too much energy to be cooped up in the house for much longer before sending us all crazy).

I lie...he has already sent us crazy.

I digress.

Here are 4 chicken recipes you need in your life right now:

  • Sage and Macadamia Nut Crusted Chicken Breasts: low carb and super versatile. Serve with some mashed potatoes and steamed veggies, slice leftovers into strips, and pop them into a wrap for lunch the next day with some lettuce and tomato.
  • 4 Ingredient Teriyaki Chicken Skewers: we love these paired with a satay sauce and some dry slaw (I totally cheat and buy the pre-shredded stuff from the grocery store)
  • Chicken Fajita Casserole Bake: this one is great if you have a busy evening coming up, it can be made up in the casserole dish and kept in the fridge until needed. Just pop it in the oven and you are good to go.
  • Chicken Shawarma Salad with Garlic Yogurt Sauce: this is on repeat in our house. We have upped the ante on this one, and I get hubby to do the chicken on the Kamodo Joe, but the oven version I share here is just as good.
